- Preheat oven to 350°F.
- Cook egg noodles according to package. Drain and place noodles in bottom of a 9x9 oven safe dish.
- In a large skillet on medium-low heat, combine tomato sauce and seasonings until slightly bubbling. Add canned beef to sauce, breaking up meat with a spoon or spatula, until thoroughly combined.
- Add the spinach, chickpeas, and mixed vegetables to tomato and beef mixture. Stir to combine. Continue cooking, stirring occasionally, until mixture is warm throughout, about 5-10 minutes.
- Place meat mixture on top of egg noodles in oven safe dish. Top with cheese.
- Place dish in oven until cheese starts to bubble, about 10 minutes.
