- In a large pot, boil pasta according to instructions on package. Do not over cook the pasta.
- Drain the pasta water and set to the side.
- In a large pan, heat olive oil over low-medium heat.
- Add the chicken breast and season with salt, black pepper, and dried oregano. Cook for about 2 minutes.
- Add cream of mushroom soup. Let the soup come to a slight boil.
- Add the cooked pasta and combine well. Add spinach, combine well. Let cook for an additional 1-2 minutes.
- Remove from heat. Serve warm and enjoy!
TIPS:
- Add 1/3 cup of low-fat shredded cheddar cheese after adding the spinach and garnish with fresh parsley!
